Raw fish (anisakis)

The raw fish, in Italy it has become very fashionable in recent years, although around the world it is consumed along. Japan has the base of its cuisine, many preparations of “raw” with variety of fish and combinations that never arrived in Italy.
Everyone now knows sushi and sashimi, although probably you still so much confusion. To summarize, sushi is raw fish served with morsels of rice and sashimi is raw fish served without rice, usually served with Daicon (great turnip long white) finely cut into julienne strips, pickled ginger, soy sauce and wasabi … then with time will put a bit ‘of recipes.
After this short introduction, I would like to remind everyone that the raw fish and ‘very good, but you can not’ underestimate the mandatory procedure to avoid possible intestinal problems, which in some cases can be very serious. In fact it can happen, fortunately rare, to find the Anisakis while working the fish.

Tocchetti di tonno alletterato crudo

In recent years the fashion of bluefin tuna has almost led to the extinction of this species.
Trying variants, I have recently reevaluated tunny tuna, very common in our seas.
It is great for a lot of preparations, both raw and cooked.


For this recipe we take a filet of tunny tuna, super fresh (otherwise better to eat a plate of plain pasta dressed with a good extra virgin olive oil), we remove the darkest part bitter-tasting and more aggressive (buzzonaglia or bozzonaglia), which do not throw it, we can use for other recipes and treat the fish as for other raw preparations, that is, bringing it down to -20ºC for 24 hours.
Once defrosted tuna, cut into regular cubes and have on the plate, condiamo with extra virgin olive oil, and a few drops of soy sauce.
