Shrimp Wrapped in Crispy Potato Strings is a dish that I started to propose at the end of 2006.

The inspiration came to me in Japan seeing how all raw dishes, sashimi, etc. were decorated with vegetables strings (daikon and other vegetables), which were obtained with a special tool.

I bought it having already the idea of preparing Shrimp Wrapped in Crispy Potato Strings. I would have fried accompanied with a sweet and sour sauce.
For the sweet and sour sauce I remembered that my friend and colleague Ciaran Kavanagh he gave me the recipe he had used about 10 years ago to accompany it with the chicken nuggets.

I must admit that the Shrimp Wrapped in Crispy Potato Strings is one of the most popular dishes from those that I have created until now even if personally I prefer other.

Because they are at the top you have to observe different tricks, so even if the Shrimp Wrapped in Crispy Potato Strings, is one of the most imitated recipes, does not bother me because  the originals one, are signed Matteo Casadio.
