Shrimp Wrapped in Crispy Potato Strings is a dish that I started to propose at the end of 2006.
The inspiration came to me in Japan seeing how all raw dishes, sashimi, etc. were decorated with vegetables strings (daikon and other vegetables), which were obtained with a special tool.
I bought it having already the idea of preparing Shrimp Wrapped in Crispy Potato Strings. I would have fried accompanied with a sweet and sour sauce.
For the sweet and sour sauce I remembered that my friend and colleague Ciaran Kavanagh he gave me the recipe he had used about 10 years ago to accompany it with the chicken nuggets.
